The Story of Hakodate Yukinko

The story of Kafukudo Kitchen

We are a small kitchen located at northern city of Japan
that provide joyful ways to enjoy the blessings of nature

Somewhere in Oiwake-cho, there are two brick buildings in Oiwake-cho, Hakodate. This is where we, Kafukudo Kitchen were located.
One of the building is used to prepare and craft sweets by hand, and the other one is piled with tons of freshly harvested ingredients that purchased straight from local farmers.
Besides the sweets which is designed in laboratory and mass-produced by factory, we also produce snacks and cooked foods which similar to each other. All of them were made inside a small kitchen that located at northern town so everyone can have a joyful way to enjoy the blessings of nature

The Story of Hakodate Yukinko

The white sweet potatoes and pumpkins from Assabu are packed with robustness
that allow them to grow well against the harsh climate.

Assabu is a basin region that surrounded by low mountains where it is hot in summer and cold in winter.
A town where such extreme conditions existed, Assabu.
Sweet potatoes and pumpkins that were grown in these land are packed with nutrients and grow flourish because of the differences in cultivation temperature, clean air, and clear streams that flow through the land.
The sweet potatoes and pumpkins are as white as snow and have a clean, sweet taste with rich flavor and aroma.

Preparation is started by washing away the soil and peeling the sweet potatoes and pumpkins that had arrived from the fields.

At Kafukudo Kitchen, preparation is started by cleaning and peeling the crops that arrive from the fields of Assabu, Then, it is squashed and strained into smooth and fine paste in order to preserve the natural aroma of sweet potatoes and pumpkins.
It is then combined with Hakodate milk, which is made exclusively from raw milk from the Donan region, to create a paste full of blessings of nature.
Next, the paste is slowly baked in the oven.

A handmade snack with a soft and mellow texture that made from white sweet potatoes and pumpkins from Assabu.

After the paste is baked and cooled, it is carefully shaped one by one into a round shape.
Then, whipped cream with unique flavored is whipped until the tip of the whip stands and wrapped by soft and spongy mocha that resemblance of first snow.
The final result was "Hakodate Yukinko", a soft and smooth texture hand-made sweets.

Inside the small brick kitchen, even at the coldest mornings, we make Hakodate Yukinko with all our hearts.
Our recommendation to enjoy Hakodate Yukinko is to take it out of the freezer and leave it at room temperature until it is half-thawed or half defrosted which give you a texture just like an ice-cream.
Our Hakodate Yukinko is an anjoyable regardless of both children and adults.

Snow Fairies: The Story of Yukinko (Snow Child)

The snow fairy is said to live in Assabu, and unlike the snow child of Niigata and other regions, she is a mysterious, stateless being with the appearance of a fairy from northern Europe.
It is said that they appear out of nowhere in the winter and live in a Kamakura (House made of snow) in the fields of Assabu.
You may be able to find them in the snow-covered village of Assabu Town or in the neighboring town of Hakodate City, which famous for its foreign atmosphere.
